Saint-Vincent is a Gothic church in the Bastide Saint-Louis, built in the austere southern, or Languedoc, style. Work began around 1269, the nave rising over some 60 years from the 1320s, with the choir added in the 15th century. Its single nave is about 20 metres wide, one of the widest Gothic naves in France. The church was classified as a Monument Historique in 1907.

The octagonal bell tower, roughly 54 metres high, can be climbed by about 232 steps to a panorama over the lower town and the Cité. It holds one of France's largest carillons, whose bells were recast and expanded from 1710 onward. From this tower the Cassini family carried out survey work for the first accurate map of France, and in 1798 it served as a station for Méchain and Delambre's meridian measurements. The climb is free but seasonal.
