Santo Wines is Santorini's cooperative winery, sitting on the edge of the caldera in the village of Pyrgos. It grew out of the Union of Santorini Cooperatives, founded in 1911, and its modern winemaking and tasting facility was built in 1992. According to the cooperative, it draws on the island's many growers and is Santorini's largest wine producer, with a terrace that looks out over the caldera and the sunset.

The island's vineyards grow in volcanic soil of lava, ash and pumice, poor in organic matter but rich in minerals, which gives the wines high acidity and a mineral character. The flagship white grape, Assyrtiko, originated here and stays sharp even when fully ripe. Many vines are old and ungrafted and are trained low in a basket shape called kouloura. The winery is also known for Vinsanto, a sweet wine of sun-dried grapes aged in oak.
