A masseria is a fortified farmhouse, typically dating from the medieval through 18th-century periods, that formed the economic backbone of the Pugliese countryside. Built to both produce and defend, with thick stone walls, a central courtyard, watchtowers, and storage for olive oil, grain, and animals, the masseriae were essentially self-sufficient rural communities, able to withstand raids and sieges that were common in the insecure southern Italian countryside. The olive oil production facilities (frantoi) were built into the ground floors and basements, and many masseriae processed hundreds of tonnes of olives per year. Today, hundreds of masseriae throughout Puglia and the Salento have been converted into agriturismo accommodations, hotels, and event venues, offering visitors the chance to stay within these extraordinary historic structures while experiencing the agricultural landscape of the region.
Did you know? The underground olive oil presses (frantoi ipogei) found beneath many Salento masseriae were built underground specifically to maintain a constant temperature of around 15-20°C, the optimal range for olive oil pressing, which produces better quality oil at lower temperatures.
