Cisternino is a hilltop white town about 15 kilometres from Ostuni that is considered one of the most beautiful villages in Italy, and is also famous throughout Puglia for its unique culinary tradition: the fornelli pronti. These are a hybrid between a butcher's shop and a restaurant, you choose your cut of meat at the counter (the Cisternino area is famous for its lamb and pork), it is grilled on the spot, and served at tables in the back of the shop or outside on the street. The tradition is said to date from the post-war period when the butchers of Cisternino began grilling unsold meat at the end of the day to avoid waste. The result is one of the most convivial and authentic eating experiences in all of Puglia, and the town itself, with its brilliant white historic centre and extraordinary hilltop views, is worth a visit for its architecture alone.
