The gastronomy of Ostuni and the surrounding Valle d'Itria represents one of the most coherent and distinctive regional cuisines in southern Italy, a cuisine that is simultaneously simple and complex, deeply rooted in the agricultural traditions of the olive grove and sea, and remarkable in its use of local ingredients. The cuisine is fundamentally a peasant tradition elevated by the quality of exceptional raw materials: the ancient olive oil, the fresh pasta, the local lamb and pork, the coastal fish and seafood. The orecchiette, the ear-shaped pasta typical of this part of Puglia, made fresh daily and served with broccoli rabe, with meat ragù, or with fresh clams, is the emblematic dish of the region. The local cheeses, burrata, stracciatella, and cacioricotta, are made from the milk of local sheep and cows and are some of the finest in Italy.
