Pugliese cuisine is one of the great Mediterranean food traditions, rooted in the cucina povera (peasant cooking) of a land that was poor in resources but rich in creativity. The fundamental ingredients are durum wheat, olive oil (Puglia produces 40% of Italy's entire output), vegetables, legumes, and seafood. The most famous dish is orecchiette con cime di rapa, the ear-shaped pasta with bitter turnip tops, anchovies, garlic, and chilli. Other classics include fave e cicoria (mashed broad beans with wild chicory), tiella di riso, patate e cozze (layered rice, potato and mussel bake), and the extraordinary pane di Altamura, an IGP-certified durum wheat bread that has been baked in the same tradition for two thousand years. Puglia's olive oil, produced from the ancient Ogliarola and Coratina varieties, is among the finest in the world.
