The Mesón de Cándido stands in the Plaza del Azoguejo, at the very foot of the Roman aqueduct. The building was an 18th-century roadside inn, inaugurated in 1786; it took its present name in the 1930s, when the innkeeper Cándido López took it over and made Segovian cochinillo asado (roast suckling pig) famous far beyond the city, earning the honorific 'Mesonero Mayor de Castilla.' Its trademark is the ritual of carving the crisp-skinned roast with the edge of a plate, to show how tender it is. Cochinillo de Segovia was granted a European Protected Geographical Indication in 2024, covering milk-fed piglets raised in the province. The Mesón lies at the heart of the UNESCO-listed old town of Segovia.
