Arzak is one of the most important restaurants in the world, not just for the quality of its food, which has held three Michelin stars since 1989, but for its historical role as the birthplace of Nueva Cocina Vasca (New Basque Cuisine), the movement that transformed Spanish cooking from the 1970s onwards. Juan Mari Arzak (born 1942) began updating the cooking at his family's restaurant in the early 1970s, inspired by the nouvelle cuisine revolution in France, and with fellow Basque chefs Pedro Subijana, Karlos Arguiñano, and others, created a new approach to Basque cooking that preserved traditional flavours and ingredients while applying contemporary techniques. Arzak's restaurant is in a 19th-century house on the hill of Miracruz south of San Sebastián, and it now operates as a partnership between Juan Mari and his daughter Elena Arzak, who has been named best female chef in the world. The tasting menu runs to around 15 courses and changes constantly; the laboratory (Arzak's famous R&D kitchen, where over 1,500 ingredients are catalogued and tested) is the engine of its perpetual renewal.
