Pane di Matera is one of the most distinctive artisan breads in Italy, a large, dome-shaped or crescent-shaped loaf made from durum wheat semolina (semola di grano duro rimacinata), natural sourdough starter (lievito madre), salt, and water, baked in traditional wood-fired ovens to produce a characteristically thick golden-brown crust with dense, chewy, cream-coloured crumb. The bread is celebrated for its exceptional keeping quality, it stays fresh and soft for up to eight days, thanks to the sourdough fermentation and the dense durum wheat structure, a quality that was essential in an agricultural society where bread was baked once a week. It received IGP (Indicazione Geografica Protetta, Protected Geographical Indication) status from the European Union in 2008.
