To understand Cologne, you have to understand two things its people are passionate about: their beer and their Carnival. Kölsch is the city's own style of beer, a pale, top-fermented, delicately hoppy brew that, by a 1986 convention, may only be brewed in and around Cologne. It is served in distinctive slim cylindrical glasses called Stangen holding just 0.2 litres, carried in round trays by waiters known as Köbes, who keep bringing fresh glasses and marking each one on your beer mat until you lay the mat over the glass to say "enough." Cologne Carnival is the city's "fifth season," officially beginning on the 11th of November at 11:11 a.m. and erupting into days of costumed street parties, culminating in the vast Rose Monday parade before Lent. The carnival greeting, shouted everywhere, is "Kölle Alaaf!", roughly, "Cologne above all!"
