ALMA, La Scuola Internazionale di Cucina Italiana (The International School of Italian Cuisine), is based in the Reggia di Colorno, a magnificent Baroque palace 15 kilometres north of Parma that was built in the 18th century for the Farnese and later used as a summer residence by Marie Louise of Austria (who planted the famous rose garden in its grounds). The palace's setting, in the flat, foggy Po Valley surrounded by the agricultural landscape that produces Parmigiano-Reggiano, Prosciutto di Parma, and culatello, is considered the ideal environment for culinary education, immersing students in the food culture of the world's most renowned gastronomic region. Founded in 2004, ALMA offers professional courses in Italian cuisine, pastry, bakery, and wine service to students from Italy and worldwide, with a curriculum designed by the school's former rector Gualtiero Marchesi, the first Italian chef to receive three Michelin stars, and maintained in partnership with the leading figures of contemporary Italian cuisine.
